- 1-1/2 cups granola
- 1 cup Brown Cow plain yogurt, whole milk or Non Fat
- 1 egg
- 1/2 cup maple syrup
- 1 cup whole wheat pastry flour
- 1/2 tsp. sea salt
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 cup soy margarine, melted
Soak the granola in the yogurt for 5 minutes or more (the longer it soaks, the lighter the muffin). Stir in egg and maple syrup. Mix together the dry ingredients. Stir into the granola mixture. Finally, mix in melted margarine.
Bake in greased muffin tins at 400° for 15-20 minutes. Makes 8-9 good sized muffins or 1 doz. small muffins.
