Blueberry Custard

Ingredients

  • 1/4 cup sugar
  • 1/2 cup flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup Brown Cow Cream Top Blueberry yogurt
  • 1 1/2 tsp vanilla extract
  • 3 large eggs
  • 2 cups blueberries, fresh or frozen


Directions

Preheat oven to 425° F. Lightly grease 9-inch pie plate. In a blender, combine all ingredients except berries, until smooth (10-15 seconds). Place fruit on the bottom of the baking dish and pour egg mixture on top of it. Bake for 15 minutes, reduce heat to 350° F and bake for 20-25 minutes until light golden brown. Cool for 20-30 minutes. Serve room temperature or chilled. Makes 6 servings.
