Blueberry Custard
Ingredients
- 1/4 cup sugar
- 1/2 cup flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 cup Broan Cow Cream Top Blueberry yogurt
- 1 1/2 tsp vanilla extract
- 3 large eggs
- 2 cups blueberries, fresh or frozen
Directions
Preheat oven to 425 F. Lightly grease 9-inch pie plate. In a blender, combine all ingredients except berries, until smooth (10-15 seconds). Place fruit on the bottom of the backing dish and pour egg mixture on top of it. Bake for 15 minutes, reduce heat to 350 F and bake for 20-25 minutes until light golden brown. Cool for 20-30 minutes. Serve room temperature or chilled. Makes 6 servings.
